6    zucchini or yellow squash sliced

1    onion sliced   

1    green pepper diced

1    10oz can cream of mushroom soup

4    cups crushed stale chips or saltines

1    cup shredded cheddar cheese

Salt and pepper to taste

Cook squash, onion and green pepper in 1 cup of water till tender

Add soup, salt and pepper and stir

Remove from head and add chips or saltines and 1/2 cup cheese

Pour into baking dish-bake at 350 degrees an hour

Turn oven off and sprinkle remaining cheese on casserole

Return to over and allow cheese to melt
