Barbara's Oatmeal Walnut Pancakes

1 cup uncooked oatmeal **see note**

1 cup whole wheat flour

1/2 cup wheat bran (wheat germ is acceptable)

1 tsp. baking soda

1/2 tsp. salt

2 heaping tbsp. brown sugar

1 tsp cinnamon

2 eggs

2 cups milk ( we use organic milk)

4 tbsp. canola oil

1 cup crushed walnuts

Heat griddle or fry pan on medium

Mix all ingredients together and let sit for 20-30 minutes for liquid to soften oatmeal.  Softens while you go for a run.

Spoon about 1/4 cup batter onto to griddle

Cook till bubbles stop forming, flip and cook about 2 minutes more.

Serve with cinnamon applesauce, sliced bananas or your favorite sugar-free syrup.

** note**  You can use cooked oatmeal and decrease milk by about 1/2 cup.
